Mee Chiang Kueh
Mee Chiang Kueh, Mee Cheng Guay, Mian Jian Gao etc. This is Teochew breakfast stuff 40 years ago.
We were not allowed to eat anywhere other than the dinner table since its fillings fall everywhere. To prevent this mishap from happening, I make my filling slightly moist so that I keep my floor nice and clean. But things seem to have the ability to transfer themselves elsewhere, so I normally find the sweet fillings stuck to my face instead. Still, to play safe, don't eat this in the family car.
Pancake :
250 g self raising flour
2 T caster sugar
1 egg
½ T yeast
½ baking powder
Pinch of salt
260ml of water
Coconut filling :
Sugar Melaka
Grated coconut
Prepare coconut filling :
Microwave Melaka until it is melted
Stir in coconut
Prepare the pancake :
Mix dry ingredients
Add egg and water
Mix thoroughly and leave to rise for 1 hour
Oil a flat frying pan
Ladle the pancake mix and use the rounded side of the ladle to spread the wet mix on the pan evenly.
Cover the pan and cook over low heat
When the surface of the dough is 90% cooked, spread coconut filling on half of the pancake
Fold the dough over the filling
Serve hot
