Vanilla cupcake

Tonight, there is an emergency of sorts. A couple of hours before bed time and left with no breakfast for tomorrow save for a slice of pound cake, I had to bake something fast and non-fussy. As hubby had waxed lyrical over cupcakes, it seems that it would make his day complete tomorrow to make his wish come true.

The entire project took only 15 minutes to complete, minus baking time. It was one happy guy half an hour later photographing his breakfast. Talk about having your cake and eat it!

112 g self raising flour, sieved
112 g butter, softened
100 g caster sugar
2 big eggs, room temperature
1/2 tsp pure vanilla essence
1/2 tsp baking powder

Preheat oven at 180 C.

Combine everything in a mixing bowl and whisk on medium speed for about 3 minutes, until batter is pale and fluffy. Spoon into 6 big cupcake holders, half full, and bake for 20 - 23 mins. Cool cakes before serving.
