Apple Crumble Cake



It's a hard decision to choose between ice cream or chocolate sauce, so I had both!

It’s been a very long while since I have enjoyed such a cake – full of bite with apple, a bit of tart and sweet topped off with a flaky crust.  This is about the only time that I pare and core apples, but the effort is worth it. I would go for the granny smith anytime because it is able to withstand the baking without compromising texture.

Ingredients :

2 eggs, room temperature
1 cup brown sugar
3 T   rum
1/2 t pure vanilla extract
1 3/4 cup all-purpose flour
2 t baking powder
Pinch of salt
4 apples,  peeled , cored and cubed
130g   unsalted butter, melted and cooled

1 sachet of cereal mix



Method :

1.    Prepare an 8 inch springform. Line the base.
2.    Preheat oven to 170C.
3.    Whisk egg until frothy.
4.    Whisk in sugar, followed by rum and vanilla.
5.    Sift in flour ,  baking powder and salt.
6.    Finally stir in apples.
7.    Pour batter into the pan.
8.    Sprinkle the cereal mix on the batter evenly.
9.    Bake in the preheated oven at 170C for 55 mins.

To fully enjoy the cake, serve with  ice cream or chocolate sauce.
