Glutinous Rice Lor Mai Kai


A basic Lormaikai with just chicken
It was a dinner emergency , since hubby's craving for this dish happened at the most inconvenient time, Lormaikai being a breakfast food. Besides, I would never make myself eat steamed glutinous rice from an aluminum bowl , made in some factory days ago.

I whipped this dish almost last minute and was  glad to say, despite the pared down chicken only ingredient ( minus the bells and whistles of sausage,mushroom etc) , the taste was almost authentic hawker fare. At least that's what a contented hubby said.


Serves 4.

Ingredients :

1 cup glutinous rice
1 shitake mushroom,dehydrated
1 chicken, skinned and cut to bite size

Chicken marinade :
1 T oyster sauce
1 T light soy sauce
1 T sesame oil
1 T corn flour
1 T wine
1 T black sauce
1 t sugar
Pinch salt,pepper

Rice flavoring :
1 t sugar
Scant salt,pepper
1 t light sauce
1 t sesame oil

Marinate chicken for at least 30 minutes.

Meanwhile, soak the rice for 15 minutes with hot water. Drain water and nuked rice for 2 minutes, stirring in between.

The rice will be semi-cooked. Set aside.

Microwave the chicken for 2 minutes, stirring in between.

Top the rice mix with chicken.  I added water to the rice, making it way too mushy. Next time, I will use the marinade and juice of the chicken for the steaming liquid instead.

Steam covered for 40 minutes or until cooked. Garnish with fried shallots and serve hot.

Goes well with chicken and watercress soup.
