Almond cookies




This is one of the easiest cookie recipe that I have ever attempted. It took less than an hour to produce these delectable, melt in the mouth cookies in less than an hour, without the need for the electric whisk even.

No whisking or creaming  - how easier can it get ?

Ingredients :
115g plain flour
110g almond meal
50g icing sugar
1/2 tsp baking powder
1/8 tsp baking soda
1/4 tsp seaflakes,crushed
70g canola oil

Egg yolk for egg wash

Method :
Preheat oven to 150C .
In a mixing bowl, combine all the dry ingredients.
Drizzle the oil in the center of the bowl, stirring continuously. It will gradually form big clumps.
Do the pinch test - when the dough holds when  pinched together, do not add anymore oil.
Knead to mix oil and dry ingredients.
Use a scoop to scoop out equal amounts of dough. Make little balls.
Arrange balls  on an oiled baking tray.
Brush with egg wash.
Bake 150C for 16-17 minutes.
Cool well before storing.
