Avocado dip ( onion-less )
This is one of my favorite dips but the kiddo at home finds the onion in the avocado dip disagreeable. Short of the chopped onions, this is almost the full works.
Cut the avocado lengthwise. Make a half twist on the top half of the avocado to separate the 2 halves of the fruit. Carefully tapthe knife onto the seed until it sticks and give it a twist to remove the seed. Scoop out the flesh of the avocado.
Finely chop the avocado and set aside. Chop the flesh of a tomato and discard its seeds.
Mix the chopped avocado, tomato with a tablespoon of apple cider ( or lime juice ) and a pinch of salt. Chill for at least 2 hours to allow the flavors to blend.
Serve with tortilla chips or water crackers.
