Chocolate cookies



Scene  :
9 pm.Monday night, at the living room sofa. There was an encore telecast of the Olympic closing ceremony. I was at browneyedbaker, imagining all the cookies I would bake.

Girl girl , taking a Chinese homework break :
What are you looking at?

Me :
Cookies. They look so good !

Girlgirl :
Are you baking any ?

Me :
Maybe not. I am only working on the thinking process.

Girlgirl :
Whyyyy ???? ( it was the longest single syllabus word she has said for a week )

Scene :
10 pm. 20 medium cookies , piping hot from the oven, were ready for quality inspection by girlgirl.

Thank goodness I'm done with cookies for the week !
Ingredients :

1 cup plain flour
1 tsp baking soda
1/4 sea salt

110g butter
1/2 cup  brown  sugar
1/2 cup peanut butter
1/2 tsp vanilla extract
1 egg

1/2 cup steel cut instant oats
1 cup   chocolate buttons

Mix flour, baking soda,  salt in a medium bowl.  Set aside.
Cream butter, sugar, peanut butter, vanilla extract  at medium speed - slightly less than 3 minutes.
Add egg to just combine.
Add oats. Mix to combine.
Stir in chocolate buttons.

Prepare 2  lined trays.
Preheat oven to 180C.
Use a tablespoon and  drop dough onto lined tray.
Bake at 180C for 10 minutes.  At this stage, the cookies will brown at the rim and the middle is soft and cakey.
Reduce the temperature to 160 C. Bake for another 15 minutes
Cool cookies in the oven, with the oven door slightly ajar.
Cookies should be brown, light and brittle.
