Chinese New Year melt-in-the-mouth peanut cookie
I love the onion oil smell in this cookie. It reminds me of Teochew cookies mum used to buy from traditional shops when we were kids. Today, this taste has transported me to the good old days again. That's how a recipe should be, the power to create and recall memories.

Ingredients
300g plain flour
1 tsp baking powder
1 tsp baking soda
100g icing sugar
200g ground roasted peanut
120 ml onion oil ( oil from fried onions )
egg for egg wash
Method
Sieve flour with baking powder and baking soda.
Add ground peanut and icing sugar.
Make a well and drizzle onion oil into flour mixture and stir until it clumps together.
Let rest for ½ hour so moisture can be absorbed making mixture becomes less crumbly.
Use a ½ tsp measuring spoon and press it into shape. Place close together on baking tray lined with silicon sheet.
Apply egg wash and bake at 180C for 20 minutes or until golden brown.
