Ma lai gou ( steamed Malaysian cake )

Recently, my little girl has discovered the wonderful foods of my childhood, especially this humble snack. So I decided ma-lai gou for breakfast will help give her day a sweet start. It turned out better than expected and the process is straight forward . Great for any novice baker like me.

A:
3 eggs
3/4 cup soft brown sugar

B:
80g sweetened condensed milk
1 teaspoon vanilla essence
1/4 cup melted butter

C: Sieved components.
1/2 teaspoon baking soda
1 cup all purpose flour
1/2 teaspoom baking powder

Method :

Oil an 8 inch bowl and line the bottom of the bowl with a parchment paper .

Sieve ingredients at C. Set aside.

Beat ingredients A for 5 mins until frothy with a hand held beater.
Add ingredient B into egg mixture. Beat for another 1 min.
Fold C into mixture of A and B gently.
Pour into oiled bowl.

Use a foil to form a tent over bowl. This prevents water from dripping onto cake's surface.

Steam for 45 minutes or until a stick comes out clean from the center of the cake.

Leave cake to cool before removing it from bowl. Serve warm.
