Hummingbird cupcake


I have been out of action for a while probably because the weather has caused much lethargy to my body and mind. But when the kid has to eat leftover bread crusts for breakfast, it is time to break out of ennui and do something. So here it is, all the handy ingredients for a cup cake without the need for self raising flour ( which warrants a trip to the store ).

I am a non banana person but 2 testers says it's good so here it is :

Makes 7 big cupcakes.

125 g plain flour
1 teaspoon baking powder
1/2 teaspoon cinnamon

115 ml oil
125 g fine sugar

2 eggs

150g banana, mashed
1 tablespoon desiccated coconut

Sieve flour, baking powder,cinammon
Preheat oven to 180 C

Whisked oil and sugar until light and fluffy before whisking in the eggs.
Add sieved mix in 3 portions, stirring well.
Add banana and coconut.
Mix well.

Scoop batter to 7 big cups and bake for 30 min, 180 C or until tops are browned and stick pricked into the center of the cake comes out clean.

Remove fro oven and cool. Marries well with a cup of earl grey!
