Super fluffy pancake


The following looks like a lot of work for making a pancake but trust me, it is all worth it! This is the highest respect I have ever accorded to the humble pancake and it is unbelievable how it turns out. Now I shall think twice about buying the premix and stir version.

For 4.

Set aside 3 eggs and bring them to room temperature. Separate yolks and whites in 2 mixing containers.

For the yolks, add 140 ml milk and stir.

Sift 114g plain flour, 1 tablespoon baking powder into a mixing bowl. Pour in milk-yolk mix into the centre of the flour and mix well. Set aside.

Add a pinch of salt to the whites, beat until stiff peaks form.

Fold the egg whites into the flour mixture and mix well. Take care not to over mix.

Heat a non-stick frying pan on medium high heat. Scoop 2 tablespoons of fluffy pancake mix on hot pan. Fry each side until golden brown. Serve with honey, fruits and jam.

Really eye-popping good!
