Although I have my own waffle recipes, it is fun to try out recipes from others once in a while. Hubby asks what difference does it make as the ingredients are almost the same in most.
Answer: Lots. The ratio of milk, fat, flour differs broadly and it is amazing how a shift in the numbers can change the taste and texture of the end result.
Anyway, here is one recipe with lots of good reviews. As I am making this as a one-in-all lunch waffle, I incorporated cheese and ham into it. Great for eating with just one hand!
Verdict: Fluffy as promised. As the batter is thick but not too lumpy, it is easy handling of the batter with an ice cream scoop with little mess.

Ingredients:
2 cups plain flour + 4 tablespoons fine sugar + 4 tsp baking powder + ½ tsp sea salt
1.5 cups milk +2 eggs ,beaten + 1 tsp vanilla extract + 85g melted butter
10 small pieces of cheddar cheese strips + 10 pieces of ham
Method:
In a mixing bowl, combine flour.
Make a well.
Add wet ingredients.
Stir and mix well.
Using an ice cream scoop, spoon a scoop of batter onto the waffle maker.
Put a piece of cheese and ham.
Cover with another scope of batter.
Cook according to your maker instructions.
